Ingredients

  • 10 dried mushrooms
  • 10 slices of young ginger
  • 8 Shallots – bruised
  • 6 cloves of bruised garlic
  • 4 dried chilli
  • 1 cinnamon stick
  • 2 pcs of star anise
  • 1 handful of dried cuttlefish shreds
  • ½ pig trotter – cut
  • 250g Pork Belly
  • 500ml chicken stock
  • 1 sea cucumber – sliced
  • 1 can of razor clams
 
Steps
 
  1. Add 3 tbsp of oil to Beauty pot. First saute ginger, followed by shallots, garlic, dried chilli, cinnamon stick & star anise.
  2. Add dried cuttlefish shreds and trotters, continue to saute for about 6 mins
  3. Season with 3 tbsp of I-Chef light sauce, some pepper, 1 tbsp of sesame oil, 1.5 tbsp of oyster sauce & 1.5 tbsp of I-Chef dark sauce
  4. Add chicken stock, 500ml of water,1 heap tsp of sugar and soaked Chinese mushrooms
  5. Cover and let it boil, once it boils, turn to small fire and simmer for 1 hour
    Sea cucumber & razor clams are to be added 30 mins before completion
